Jesica Avalos, Head barista at OR Coffee, a small chain of coffee bars (4 locations) in Belgium. OR Coffee also operates it’s own Roastery. Avalos was born in mexico and moved to Belgium 8 years ago. In 2015 she won the Belgium Barista championship.


How do you take your coffee?

90% of the time black espresso but I sure appreciate drip coffee and even cappuccinos.

How many coffee cups do you drink on an average day?

4 to 6 espressos.

Do you enjoy having your coffee with pastry alongside, and if so, what is it?

Yes. When the quality of the pastry is as good as the quality of my coffee.

Do you have a favorite Single-origin coffee?

I really like our direct trade Rwandan coffees. Specifically from the farm of Nyambumera in the sector Mahembe.

What was the most unusual or experimental coffee you tasted?

I think my very first espresso an unwashed sidamo from the farm Shakisso (in Ethiopia). It really blew my mind. Lovely first experience with specialty coffee.

What is your favorite coffee shop and what makes it enjoyable?

Coffee Collective in Copenhagen. Very friendly staff, down to earth way of thinking.

From your experience, what is the most important factor when it comes to making good coffee?

Balance.
