How do you take your coffee?

I love a Cortado.

How many coffee cups do you drink on an average day?

Typically I have 3; however, when we do tastings and sampling of potential new beans and single origins, I have 4-6 cups in a day.

Do you enjoy having your coffee with pastry alongside, and if so, what is it?

We have a superb French bakery supplying us with fresh butter croissants, almond croissants and pain au raisin. Mmmmm-mmmm!!

Do you have a favorite Single-origin coffee?

Our roaster is Stumptown from Portland, USA. They are exquisite!! We have tasted sooooo many gorgeous single origins. At the moment, I’m loving our Peru Chirinos.

What was the most unusual or experimental coffee you tasted?

We have been experimenting with Marijuana and Peru Cold Brew.

What is your favorite coffee shop and what makes it enjoyable?

Platform 7 of course!!! It has an incredible vibe that we have carefully, lovingly and tenderly created.

From your experience, what is the most important factor when it comes to making good coffee?

There are so many aspects to brewing an incredible cup…I couldn’t name just one. BUT – this is what is so much fun; ensuring that all the steps that the farmer has incorporated into growing the bean, the shipping to our roaster, the roasting itself and then finally, the coffee arriving on our doorstep. Platform 7 then needs to carefully and meticulously brew the coffee for the cup of perfection!
